My dh and I really liked this. Ingredients:
1 lb ground sirloin |
1 (1 1/4 ounce) package taco seasoning mix |
1 cup water |
72 inches corn tortillas |
1 cup salsa |
8 ounces tomato sauce |
15 ounces whole kernel corn, drained |
4 ounces sliced black olives, drained |
4 ounces mild chiles, drained |
1 1/2 cups low-fat cheddar cheese, shredded |
Directions:
1. Brown and drain the meat. 2. Add taco seasoning and water and cook until thickened. 3. Spray a 9x13-inch baking pan with nonstick cooking spray and place 6 tortillas on the bottom, overlapping the edges. 4. Mix the salsa and tomato sauce together and set aside. 5. Top the tortillas with half the meat, corn, olives, and chilis. 6. Pour half the salsa/tomato sauce mixture over it and sprinkle with half of the cheese. 7. Repeat layers. 8. Bake 30 minutes at 375 degrees. |
