Ingredients:
1 lb lean ground beef |
1/2 cup chopped onion |
1/2 cup chopped green pepper |
2 1/2 cups taco bell home originals thick 'n chunky salsa |
1 (8 3/4 ounce) can whole kernel corn, drained |
1 teaspoon chili powder |
1 teaspoon ground cumin |
10 6-inch corn tortillas, divided |
2 cups breakstone's cottage cheese |
1 cup kraft, shredded sharp cheddar cheese |
1 (2 1/4 ounce) can sliced pitted ripe olives |
Directions:
1. Brown meat in large skillet on medium heat; drain. 2. Add onion and green pepper; cook until tender-crisp, stirring occasionally. 3. Stir in salsa, corn and seasonings. 4. Layer 1/3 of the meat sauce, 1/2 of the tortillas and 1/2 of the cottage cheese in 13x9-inch baking dish. 5. Repeat layers, ending with meat sauce. 6. Sprinkle with cheddar cheese and olives. 7. Bake at 375F for 30 minutes or until thoroughly heated. |
