3/4 cup 2% mozzarella cheese |
1/2 cup nonfat plain yogurt |
1/2 cup nonfat cheddar cheese |
Directions:
1. 1/2 cup green onions, chopped) 2. 2 1/4 cups chopped tomatoes (or 16 oz can no salt) 3. 2 tablespoons cilantro (fine chopped) 4. 2 teaspoons chili powder 5. 2 teaspoons ground cumin 6. 1 tablespoon minced garlic 7. 12 corn tortillas (dredged in lime and dash chili powder) 8. 1 cup dry kidney beans (cooked no salt added) 9. 3/4 cup 2% mozzarella cheese (shredded) 10. 1/2 cup nonfat plain yogurt 11. 1/2 cup nonfat cheddar cheese (shredded) 12. Mix tomato, cilantro, onions, garlic. 13. Spoon small amount on bottom pie dish 14. add 4 corn tortillas 15. Mix spiced with yogurt 16. layer, tomatoes, beans, yogurt, small sprinkle of the cheeses, repeat next layer and top with remaining tomatoes, yogurt with cheese 17. bake 400 5-10 min. I add dredging liquid over the top before baking. |
