My other half and I did a movie night recently and instead of popcorn came up with this.....we loved it!
Ingredients:
meat filling
1 1/2 pounds of ground turkey
1 tbsp of chili powder
2 cloves of garlic minced
1 small onion minced
1 tsp salt
1 tsp pepper
1 pkg cream cheese
1 large can refried beans
1 1/4 cup of your favourite salsa (i use corn and black bean)
l green pepper chopped
5 green onions chopped
3 cups grated old cheddar cheese
1 large tomato chopped
2 cups of shredded lettuce
freshly chopped cilantro
3 large pitas cut into wedges
l bag of tortilla chips
sour cream for garnish
Directions:
1. cook ground turkey and onion,
2. add garlic fry stirring often 4 to 5 minutes. Add spice, salt and pepper.
3. Remove from stove and set aside.
4. Cut pitas in wedges and bake at 250 for 15 minutes or till crispy. set aside.
5. Mix beans and cream cheese together and layer in a 9x13 baking dish.
6. layer with salsa
7. layer with meat mixture
8. layer chopped peppers and onions
9. sprinkle with cheese.
10. Bake at 350 degrees for about 20 minutes or until cheese is starting to bubble.
11. remove from oven and let sit for 5 minutes
12. sprinkle finely chopped lettuce on top then finely chopped tomatoes and cilantro.
13. serve with pita, tortilla chips and sour cream.
14. * We did chopped green olives at the end on one half.....awesome!
