An easy to make main dish, but does take while to cook. And low fat as well.Vegetables such as zucchini or corn also can be added to make a one dish dinner. Ingredients:
1 lb round steak, fat trimmed, cut into 1/2-inch cubes |
1 quart water |
vegetable oil cooking spray |
1 large tomato, chopped |
2 large poblano chiles, sliced |
1 large onion, chopped |
1 lb potato, unpeeled, cooked, and cut in 1/2-inch cubes |
chili powder, to taste |
salt and pepper, to taste |
Directions:
1. Heat beef cubes and water to boiling in a large saucepan. 2. Reduce heat and simmer until beef is tender, about 30 to 45 minutes. 3. Drain and shred beef. 4. Spray large skillet with cooking spray; heat over medium heat until hot. 5. Cook beef until beginning to brown and crisp, about 5 minutes. 6. Add tomato; cook over medium heat 5 minutes. 7. Remove mixture from skillet and reserve. 8. Add chilies and onion to skillet, cook until tender, 5 to 8 minutes. 9. Add potatoes and cook until browned, about 5 minutes. 10. Add reserved meat mixture to skillet, cook until hot 3 to 4 minutes. 11. Season to taste with chili powder, salt and pepper. |
