I made this recipe out of things in my pantry. I like this recipe because it has very little prep time and is delicious. Ingredients:
3 (14 ounce) cans crushed tomatoes |
3 (10 ounce) cans rotel tomatoes |
2 (8 3/4 ounce) cans corn |
2 lbs ground beef |
1 (16 ounce) package corn tortillas |
1 (16 ounce) package shredded cheddar cheese |
Directions:
1. Stew: cook beef. 2. add all ingredients to large pot. 3. simmer on low for 2 hours. 4. serve in individual bowls with cheese and tortilla strips on top. 5. Tortilla strips: slice tortillas in thin strips and fry in oil. |
