While taking a food tour of NYC we were treated to Esquites, a Mexican street food of fresh corn. There are probably as many ways to make this dish as there are regions in Mexico, but this is the one I liked best. Ingredients:
4 ears fresh sweet corn (early season is best but any fresh sweet corn will work, yellow or white, your choice) |
