This is not like a regular fruitcake, but it is still a delicious cake. Ingredients:
1 (20 ounce) can crushed pineapple, undrained |
2 cups plain flour |
2 teaspoons baking soda |
2 cups sugar |
2 eggs |
1 teaspoon vanilla |
1 cup chopped pecans or 1 cup walnuts |
2 cups powdered sugar |
1 (8 ounce) package cream cheese |
1/2 cup melted margarine |
1 teaspoon vanilla |
Directions:
1. Preheat oven to 350°F. 2. Mix all of the cake ingredients together. 3. Pour into a 13x9-inch pan greased with margarine. 4. Bake for 35-45 minutes. 5. Blend all of the frosting ingredients until smooth. 6. Frost cake while hot. |
