Mexican Eggs In Tortilla Blankets |

Nice twist from the ordinary egg dish. Such a great blend of flavors. You can't go wrong with this delight. Sure to please all. We love it. Ingredients:
3 corn tortillas cut in 2 inch strips |
3 tablespoons chicken broth |
1/2 cup diced red onion |
14-1/2 ounce can stewed tomatoes |
1 cup shredded white chicken or turkey meat cooked and skinned |
1/2 cup green pepper strips |
4 eggs beaten |
1 cup pepper jack cheese grated |
Directions:
1. In a large skillet cook tortillas in the chicken broth until golden. 2. Remove and set aside. 3. Add onion to skillet and cook until tender. 4. Drain tomatoes and reserve liquid. 5. Add liquid to the skillet then cover and heat on low for 3 minutes stirring occasionally. 6. Stir in tomatoes, meat and pepper and heat through. 7. Reduce heat to low then add tortilla and eggs. 8. Cover and cook 6 minutes then sprinkle with cheese. 9. Cover and heat until cheese melts. 10. Serve immediately. |
