A little twist to the traditional egg salad! This is Mexican with a little Southwest influence! Ingredients:
6 hard-boiled eggs, coarsely chopped |
1/3 cup minced celery |
1/4 cup minced pickle |
1 teaspoon seasoning salt |
1/4 teaspoon dry mustard |
1/4 teaspoon crushed cumin seeds or 1/4 teaspoon ground cumin |
1/8 teaspoon white pepper |
1 teaspoon vinegar |
mayonnaise |
salad greens |
Directions:
1. Mix all ingredients except last 2. 2. Add mayonnaise to moisten. 3. Serve on greens. 4. Makes 4 servings. 5. Enjoy! |
