These are great topped with a bit of salsa as well. I also like them with scrambled eggs. Ingredients:
4 hard-boiled eggs |
2 tablespoons plain yogurt or 2 tablespoons light mayonnaise |
2 tablespoons minced red onions |
3/4 teaspoon mexican seasoning (morton & bassett) |
2 english muffins, split |
4 ounces green chilies, whole split lengthwise |
1/2-1 cup mexican cheese, blend shredded |
Directions:
1. Preheat oven to 450 degrees. Stir together eggs, yogurt, onion and Mexican seasoning. Lightly toast English muffins and place on a foil covered baking sheet. Top each muffin with equal amounts of egg mixture, chilies and cheese. 2. Bake for 10 min or until eggs are warmed and cheese is melted. |
