MEXICAN DEVILED EGGS This recipe came from an estate sale. I obtained it when I purchased the family collection from the Viler Estate in Georgetown, Texas in 1991. Ingredients:
8 hard cooked eggs |
1/2 cup finely shredded cheddar cheese |
1/4 cup mayonnaise |
1/4 cup salsa |
2 tablespoons sliced green onions |
1 teaspoon finely chopped cilantro |
1 tablespoon sour cream |
1/2 teaspoon salt |
Directions:
1. Slice eggs in half lengthwise. 2. Remove yolks and set aside whites. 3. Mask yolks with cheese, mayonnaise, salsa, onions, cilantro, sour cream and salt. 4. Stuff yolk mixture into egg whites then serve immediately or chill until needed. |
