Easy chicken dish with a little zing! Ingredients:
1/2 cup taco seasoning (costco sells this in a large container or make your own) |
2 -3 lbs chicken breasts (frozen) |
1 (15 ounce) can tomato sauce |
2 (15 ounce) cans mexican beans (pink) or 2 (15 ounce) cans black beans |
1 cup water |
1 -2 cup shredded mild cheddar cheese (optional) |
1/2-1 cup sour cream (optional) |
Directions:
1. In a crockpot combine water, taco seasoning, tomato sauce and beans. 2. Place chicken (boneless or boned) on top. 3. Cover and cook approx 8 hours on LOW or 5-6 on HIGH. 4. Once fully cooked shred chicken with 2 forks. 5. Allow juices to soak into chicken threads. 6. Serve over white rice. 7. We enjoy this with a dollop of sour cream and cheese. |
