My mom made this all the time when I was growing up and it was wonderful! It makes 2 loafs and it is so moist. Ingredients:
1 cup yellow cornmeal |
1 cup self rising cornmeal |
1 cup pancake mix |
1 cup grated onion |
1 1/2 cups shredded cheedar cheese |
1 tsp baking soda |
3 tbls sugar |
3 beaten eggs |
1 lb cream style corn |
1/2 cup cooking oil |
1 cup evaporated milk |
1 tsp salt |
1 tsp cayenne pepper |
Directions:
1. Mix everything together and pour in to 2 greased loaf pans and bake 35-40 minutes at 375. |
