A mexican twist on cornbread. Ingredients:
1 1/2 cups shredded cheddar cheese |
3/4 cup buttermilk |
1/3 cup oil |
2 eggs, beaten |
1 8.5 oz can cream corn |
1 can chopped green chiles |
1 cup cornmeal |
1 cup flour |
1 tsp baking powder |
1/2 tsp baking soda |
1/2 tsp salt |
Directions:
1. Grease 1 1/2 qt casserole dish 2. combine cheese, buttermilk, oil, eggs, corn, and chiles 3. in another bowl, combine flour, baking powder, soda, and salt 4. add to liquid ingredients and stir until moistened 5. bake at 375 degrees for 40-50 minutes |
