Received from a friend of my mom's. Goes great with almost any Mexican dish. Ingredients:
2 eggs |
1 cup cornmeal (i use hodgson mill yellow) |
1 cup sour cream |
1 1/2 teaspoons salt |
1 teaspoon baking soda |
1/2 cup cooking oil |
1 cup chopped green bell pepper |
1 large onion, chopped |
1 1/2 cups grated cheese |
1 (15 ounce) can cream-style corn |
1 jalapeno, seeded, and chopped |
1/4-1/2 cup bacon bits |
Directions:
1. Mix all ingredients and bake in heavy greased iron skillet. 2. Bake at 275 degrees. |
