I love this warm soup on cold winter nights. The flavor is so good you will want more and more! I love to top each bowl with sour cream and tortilla chips. Ingredients:
4 cups fresh or frozen corn kernals |
1/4 cup chopped onion |
2 tbsp butter |
2 tbsp flour |
salt and pepper to taste |
2 cups of chicken broth |
2 cups milk or cream(i use cream) |
1 cup grated cheddar cheese |
1 can (4 oz.) green chilies, chopped |
tortilla chips |
1/2 cup crisp bacon , crumbled |
Directions:
1. Saute corn and onion in butter until tender. 2. Add flour, salt and pepper, cook 1 min. 3. Gradually add broth, alternating with milk or cream until thickened. 4. Add cheddar cheese and green chilies. Do not over heat. 5. Serve soup in individual bowls, stirring in 4 or 5 tortilla chips. 6. Garnish with crumbled bacon. 7. You can put sour cream on top and I like salsa too. |
