A yummy corn casserole w/Mexican flare. Ingredients:
3 large eggs |
1 8 3/4 oz. can cream style corn |
1 10 oz. pkg. frozen corn, thawed and drained |
1/2 c. butter |
1/2 c. cornmeal |
1 c. sour cream |
4 oz. monterey jack cheese cut in 1/2 inch cubes |
4 oz. cheddar cheese cut in 1/2 inch cubes |
1 4 oz. mild chopped green chiles |
1/2 t. salt |
1/2 t. worchester sauce |
Directions:
1. Grease a 10 pie plate generously w/shortening. In a large bowl beat eggs. Add remaining ingredients and stir until thoroughly mixed. Pour into pie plate and bake uncovered at ~350 for one hour. 2. This can be served as a main dish or a side dish. You can use shredded cheese to save having to cube cheese. :o) |
