This is a recipe I got from my Mother-in-Law. A great meal for a cold day. Filling and flavorful. Ingredients:
2 c raw cubed chicken |
1/2 c diced onion |
2 cloves minced garlic |
1 can chicken broth |
1 tsp ground cumin |
1 pint half and half |
1 1/2 c mexican blend grated cheese |
15 oz can shoe peg corn |
4 oz can chopped green chillies |
hot pepper sauce to taste |
fritoes corn chips |
sour cream |
mexican blend cheese |
Directions:
1. Combine chicken, onion, and garlic in a pan on stove top. 2. Sautee until brown and cooked through. 3. Add chicken broth and cumin. 4. Bring to a boil then reduce heat and simmer for 5 minutes. 5. Add 1/2 & 1/2, cheese, corn, chillies, & pepper sauce. 6. Cook until heated through 7. Serve topped with corn chips, cheese and sour cream. |
