This is a great alternative to plain cornbread. Ingredients:
1 1/2 cup corn meal; self-rising |
1/2 cup corn meal |
1 tablespoon sugar |
1 small jar cream corn |
1 small jar pimentoes |
2 each jalapeno peppers; chopped |
1 onion; chopped |
1 cup buttermilk |
1/2 cup veg. oil |
3 eggs |
Directions:
1. Heat oven 450^F. 2. Heat cast iron skillet in oven. 3. Coat skillet well with shortening. 4. Mix all ingredients and pour 1/2-inch thick in skillet. 5. Bake until browned. |
