At our House we think this is a very good corn bread, very flavorful. Good served with chili, pot of beans, breakfast with eggs or any kind of meat dish. Ingredients:
1 1/2 cups corn muffin mix 1/2 cup milk |
2 eggs |
1 can (12 oz.) corn or 1 cup fresh corn |
1 1/2 cups grated cheddar cheese |
1/3 cup chopped green chiles |
1/4 cup chopped pimientos |
3 tbsp. green chile salsa |
Directions:
1. Preheat oven to 400.F 2. In bowl, blend muffin mix, milk and eggs until batter is lightly mixed. Add corn, cheese, chiles, pimientos and salsa. Blend gently. 3. Spread into a lightly buttered 9-inch square baking dish. 4. Bake for 45 min. or until a tester inserted in center comes out clean. Cool for 5 min. Cut into squares. |
