I got this recipe from one of DH's family member's cookbook. It sound weird, but was easy and tasted great. I used a 4 ounce can of chopped green chilis instead of the green bell pepper, egg substitute and low fat cottage cheese and low fat sharp cheese. Ingredients:
1 cup cottage cheese |
1 cup sharp cheddar cheese, shredded |
2 cups self-rising cornmeal |
1 cup creamed corn |
1 onion, minced |
1 large green bell pepper, finely chopped |
2 eggs |
1/3 cup vegetable oil |
Directions:
1. Preheat oven to 350 degrees. 2. Spray 11x7 pan with cooking spray. 3. In a large bowl mix all ingredients together until well mixed. 4. Pour into prepared pan. 5. Bake for 1 hour. 6. Serve warm with butter. |
