This side dish makes a perfect accompaniment to any Mexican entree. Ingredients:
2 1/2 cups shredded cabbage |
1 (15 ounce) can black beans, drained |
1/2 cup shredded carrots |
1/2 cup diced purple onion |
1/4 cup chopped fresh parsley |
1/2 cup plain low-fat yogurt |
1/2 cup salsa |
1 tbs plus 1 tsp mayonnaise |
2 tsp red wine vinegar |
2 tsp fresh lime juice |
Directions:
1. Combine cabbage, black beans, carrots, onion, and parsley in a large bowl 2. Toss gently. 3. Set cabbage mixture aside. 4. Combine yogurt, salsa, mayonnaise, vinegar, and lime juice in a small bowl, stirring with a wire whisk until blended. 5. Pour over cabbage mixture, toss gently 6. Serve immediately or cover and chill 2 hours. |
