This is a very light and refreshing slaw. Goes good with just about anything and it is quick and easy to make. Ingredients:
2 cups very thinly sliced green cabbage |
1-1/2 cups peeled and grated carrots |
1/3 cup chopped cilantro |
1/4 cup rice vinegar |
2 tablespoons extra-virgin olive oil |
1/4 teaspoon salt |
Directions:
1. Place cabbage and carrots in a colander then rinse thoroughly with cold water to crisp. 2. Let drain for 5 minutes. 3. Meanwhile whisk cilantro, vinegar, oil and salt in a large bowl. 4. Add cabbage and carrots and toss well to coat. |
