Great for a quick, spicy supper. Ingredients:
5 cups brown rice |
2 1/2 lb lean ground beef |
2 stalks celery, diced |
2 onion, diced |
5 cloves garlic, pressed |
2 tbls olive oil |
3 tsp cumin |
4 tsp salt |
2 tsp pepper |
1 tbl chili powder |
14 1/2 oz kidney beans |
14 1/2 oz black beans |
29 oz diced tomatoes |
4 oz green chilies |
16 oz water |
1 cup fresh cilantro, chopped |
Directions:
1. Cook rice in rice cooker. 2. Saute ground beef, with the next eight ingredients until meat is cooked and vegetables are translucent. 3. Add beans, tomatoes and chilies 4. Add cooked rice 5. When heated through, stir in cooked rice. 6. Serve with a nice salad and a spicy bean soup. |
