Another fabulous recipe for those always-a-hit chickpeas Ingredients:
1 can chickpeas, drained |
1 yellow bell pepper, diced |
1 medium tomato, diced |
1 shallot, finely chopped |
1 jalapeno pepper, seeded and finely chopped |
juice of one lime |
zest of one lime |
2 cloves garlic, minced |
1 tsp cumin |
1/2 tsp chilli powder |
handful chopeed cilantro |
salt and pepper to taste |
Directions:
1. In a large bowl, combine chickpeas, pepper, tomato, shallot and jalapeno pepper. 2. Add lime zest, lime juice, garlic, cumin, chili powder, salt anc pepper. Mix thoroughly. 3. Chill. Just before serving, add cilantro. YUM |
