Mexican Chicken with Corn Chips |

Always a big hit. Ingredients:
1 lb. chicken breast |
10 3/4 oz. cream of mushroom soup |
1 cup cheddar cheese |
1 cup mozzarella cheese |
2 c skim milk |
9 1/2 oz. corn chips |
1 1/2 c sour cream |
1 1/2 oz. taco seasoning |
Directions:
1. Cut chicken into bite-sized pieces 2. Combine 1.5 cups of cheese with milk, mushroom soup, taco seasoning, sour cream, 2/3's bag of corn chips and stir meat into mixture. 3. Place in a 9 x 13 baking pan. 4. Top with remaining chips and spread remaining cheese on top. 5. Cover and back at 350 F. for 50 minutes or until chicken is cooked through. 6. Remove cover and bake for ten more minutes and remove from oven. 7. Excellent served as a topping over rice or by itself as a casserole. |
