This is a soup that is very, very rich. I accidentally bought regular cream of chicken soup but I'm positive you could shave off a lot of calories using low sodium broth and healthy request cream of chicken soup. It's delicious and a great dinner soup. We eat this as a main dish and serve steamed veggies (usually carrots and peas) as sides. Ingredients:
2 cups fat free chicken broth |
2 cups water |
8 ounces chicken breast |
11 ounces cream of chicken soup |
1 cup salsa |
1 cup white rice, cooked |
1 cup frozen whole kernel corn |
1/2 teaspoon minced garlic |
1 teaspoon dried parsley flakes |
Directions:
1. In a large saucepan, combine chicken broth, water, and chicken pieces. Cook over medium heat until chicken is tender, about 10 minutes. Stir in chicken soup and salsa. Add rice, corn, garlic, and parsley flakes. Mix to combine. Lower heat, simmer 10 minutes. Stir occasionally. |
