This is a super easy recipe that I originally saw on a local tv show, and have modified to suit our tastes. It is easliy adjustable to your own tastes, and kids love it!! Ingredients:
1 bag doritos (any flavor, i use 4 cheese or nacho cheese), crushed, halved |
2 large cans white meat chicken, drained (or any cooked chicken) |
1 t cumin |
1 t taco seasoning |
garlic pepper |
seasoned salt |
1 small can green chiles, drained |
1/2 small onion, minced |
1 can rotel tomatoes |
1 small can sliced ripe olives, drained |
1 can cream of chicken & mushroom soup |
1 can cream of celery or cream of mushroom soup |
1 bag mexican flavor shredded cheese |
Directions:
1. EASY EASY VERSION 2. Preheat oven to 350 3. Spread half of the doritos in an ungreased 9x13 metal baking pan 4. Combine all ingredients, except cheese and remaining doritos, in bowl 5. Spoon over crust 6. Spread cheese over casserole 7. Top with remaining Doritos 8. Bake until bubbly, about 25-30 minutes 9. Garnish with sour cream and salsa 10. Good with mexican corn 11. BETTER VERSION 12. Saute the chicken with the onions, chiles and seasonings in a little EVOO and/or margarine first 13. * I use mexican seasoned chicken that i have on hand in the freezer * (posted as Lori's cooked chicken on hand for casseroles etc) |
