This is a great diabetic recipe. Ingredients:
1 (1 lb) bag frozen peppers and onions |
1 lb frozen boneless skinless chicken piece, defrosted |
1/2 package taco seasoning mix, to taste |
1/2 cup reduced-sodium fat-free chicken broth |
Directions:
1. Combine all ingredients in a large nonstick skilelt and bring to a boil over medium-high heat. 2. Lower the heat, cover, and simmer for 15 minutes. 3. Add more broth if necessary. |
