Mexican Chicken Corn Chowder |

This is a quick, easy and great chicken chowder. It's cheesy and spicy! It may become your favorite comfort food. Warms you from the inside-out. Ingredients:
1 1/2 boneless chicken breast |
1/2 cup chopped onion |
1-2 cloves minced garlic |
3 tbsp butter |
2 chicken bouillon cubes |
1 cup hot water |
1/2-1 tsp cumin |
2 cups half and half cream |
2 cups shredded monterey jack cheese |
1 can cream corn |
1 can green chilies, undrained and chopped |
1 teas hot pepper sauce |
1 can rotel tomatoes; drained |
Directions:
1. Cut chicken into bite-size pieces. 2. Brown chicken, onion and garlic in butter. 3. Dissolve bouillon in hot water. 4. Add to pan along with cumin; bring to boil. 5. Cover and simmer for 5 minutes. 6. Add cream, cheese, corn, chilies and hot sauce. 7. Cook and stir over low heat until cheese is melted. 8. Stir in tomatoes. 9. Serve immediately. |
