Ingredients:
12 ounce(s) chicken breasts boneless, skinless |
1 teaspoon(s) taco seasoning |
1 1 green or red bell pepper |
1 1/2 cup(s) salsa |
15 ounce(s) can black beans drained |
2 ounce(s) cream cheese |
1 tomatoe chopped |
2 whole wheat tortillas 6 inch |
1/2 cup(s) shredded mexican cheese |
Directions:
1. Preheat oven to 375. Warm a large nonstick skillet over medium heat; mist with cooking spray. Add chicken and taco seasoning and cook, stirring, for 2 min. Add bell peppers and cook for 2 min. stirring occasionally. Stir in salsa; cook, stirring constantly, until melted and blended, about 2 min. Stir in beans and tomato. 2. Spoon 1/3 of the chicken mixture into an 8-inch square baking dish. Cover with 1 tortilla then spoon in 1/2 of the remaining cicken mixture and 1/2 of the cheese. Top with remaining tortilla and chicken mixture. 3. Cover and bake until heated through, about 20 min. Uncover and sprinkle with remaining cheese. Bake, uncovered, until cheese has melted, about 5 min. longer. Serve hot. |
