Slightly spicy chicken casserole Ingredients:
14 1/2 oz corn |
1 can cream of mushroom soup |
2 c 1% milk |
1/4 c light mayo |
1/2 c shredded cheese |
1 1/2 lbs skinless chicken breast |
2 cups minute brown rice |
1/2 tsp cumin |
1/2 tsp chili powder |
1 tbsp chopped chives |
1/2 tsp black pepper |
1 tsp seasoned salt |
Directions:
1. cut chicken into cubes. Mix soup, uncooked rice, corn, milk, and all other ingredients (except cheese) together. Pour into 9x13 casserole dish and bake for 30-40 minutes in 350 degrees oven. When chicken is thoroughly cooked top with cheese and let stand outside oven for 5 minutes to absorb excess liquid. |
