This came from a dear friend. It is an easy meal to make, and satisfying! Ingredients:
2 cups cooked chicken |
1 green pepper, diced |
1 onion, diced |
1 can corn, drained |
1 cup salsa |
2 cups chicken broth |
2 cups minute brown rice |
1 cup shredded cheese |
Directions:
1. Saute onion and pepper. 2. Add chicken salsa, corn, broth and bring to a boil. 3. Add rice, stir and let stand covered 5-10 minutes. 4. Top with olives, if desired, and cheese. 5. Serve with sour cream and cheese. |
