This is my family's favorite casserole. Easy to make. Serve with tortilla chips, homemade salsa, avocado, sour cream or shredded lettuce...or just by itself...it's that good! Ingredients:
1 whole chicken, boiled and off the bone in bite sized pieces. you can use whatever chicken pieces you have...a great use for leftover turkey |
1 pound cubed velvetta cheese |
1 can cream of chicken soup |
1 can cream of mushroom soup |
1 can rotel tomatoes/green chilies |
1 normal size bag of tortilla chips |
approx 1 cup chicken stock |
salt & pepper to taste |
Directions:
1. Crush entire bag of chips! They smaller the better. 2. In a large bowl, mix all ingredients except chicken stock. 3. Place in a 9x13 baking dish. 4. Pour stock over entire dish. 5. *** optional *** 6. top with chopped black olives, salsa, or cheddar cheese 7. Cover and bake at 350 deg for approx 30 to 45 minutes. |
