This is my family's favorite casserole. Easy to make. Serve with tortilla chips, homemade salsa, avocado, sour cream or shredded lettuce...or just by itself...it's that good!
Ingredients:
1 whole chicken, boiled and off the bone in bite sized pieces. you can use whatever chicken pieces you have...a great use for leftover turkey
1 pound cubed velvetta cheese
1 can cream of chicken soup
1 can cream of mushroom soup
1 can rotel tomatoes/green chilies
1 normal size bag of tortilla chips
approx 1 cup chicken stock
salt & pepper to taste
Directions:
1. Crush entire bag of chips! They smaller the better.
2. In a large bowl, mix all ingredients except chicken stock.
3. Place in a 9x13 baking dish.
4. Pour stock over entire dish.

6. top with chopped black olives, salsa, or cheddar cheese
7. Cover and bake at 350 deg for approx 30 to 45 minutes.
