gooey, yummy mexican goodness Ingredients:
12 corn tortillas, yellow |
10 oz corn, sweet, yellow, frozen |
15 oz refried beans, vegetarian |
15 oz enchilada sauce |
16 oz salsa, mild |
2 cups chedder cheese, shredded |
4 cups kale, chopped |
2 large carrots, sliced |
Directions:
1. Mix together corn, refried breans, and half the cheese, and salsa, and 2 tbsp enchliada sauce in a bowl. 2. Layer a baking dish with tortillas, spread bean mixture, layer with and enchilada sauce and tortillas. 3. Top with crushed tortilla chips and 1/2 cup of cheese. 4. Bake at 375 for 40 minutes. Serve with salad, and salsa on the side. |
