This is on an old 3 x5 card that is stained and worn. I used to make it a lot before I was watching my weight, but it is a yummy dish! Ingredients:
1 lb ground beef |
1 garlic clove, minced |
1 cup chopped onion |
1 (14 ounce) can tomatoes |
4 ounces sliced black olives |
1 tablespoon chili powder |
1 1/2 teaspoons ground cumin |
2 cups shredded cheddar cheese (i also use the preshredded mexican blend) |
2 cups broken tortilla chips |
Directions:
1. Brown ground beef with onions and garlic until onions are tender. Drain. 2. Stir in tomatoes, olives, chili powder and ground cumin. Bring to a boil and simmer 10 minutes. 3. In a 2 quart prepared casserole, layer 1/2 meat mixture, 1 cup cheese, 1 cup crushed chips, remaining meat mixture, remaining crushed chips. Bake at 350 for 30 minutes. 4. Top with remaining cheese and bake 5 minutes longer, until cheese is melted and browned. |
