An egg dish, really tasty, almost like a quiche, but not quite. Ingredients:
5 eggs, beaten |
2 tablespoons butter, melted |
1/4 cup all-purpose flour |
1/2 teaspoon baking powder |
1 (8 ounce) carton cream-style cottage cheese |
2 cups shredded monterey jack cheese |
1 (4 ounce) can chopped green chilies, drained |
Directions:
1. Combine first 4 ingredients in mixing bowl; beat well with electric mixer on med. speed. 2. Stir in remaiing ingredients. 3. Pour into a well greased 9 inch pie plate. 4. Bake at 400F for 10 minutes;reduce heat to 350F, and bake about 20 more minutes, until set. 5. Cut into wedges and serve. |
