Mexican style rice w/brown rice Ingredients:
1 cup instant brown rice, dry |
1 3/4 cup chicken broth |
1 tsp cumin |
1 tsp chili powder |
2 cloves garlic, minced |
2 tablespoons tomato paste |
1 tablespoon olive oil |
1/2 cup red pepper, diced |
Directions:
1. Combine all ingredients except peppers in saucepan and bring to boil. 2. Reduce heat (med to med low) and cover. 3. Simmer 10-12 minutes or until water is absorbed. Add peppers in last 5 minutes of cook time 4. Fluff with fork. 5. *Four 1/2 cup servings* |
