MEXICAN BEEFY CORNBREAD This recipe came from an estate sale. I obtained it when I purchased the family collection from the Borin Estate in Carrollton, Texas in 1986.
Ingredients:
8 ounces grated cheddar cheese
1 large white onion minced
4 jalapeno peppers minced
1 pound ground beef browned and drained
1 cup yellow cornmeal
1/2 teaspoon baking powder
1 teaspoon salt
1/2 cup vegetable oil
1 cup milk
2 eggs
1 can creamed corn
1 can pinto beans
Directions:
1. Mix all ingredients together and pour into large greased cake pan and bake at 350 for 45 minutes.
