MEXICAN BEEFY CORNBREAD This recipe came from an estate sale. I obtained it when I purchased the family collection from the Borin Estate in Carrollton, Texas in 1986. Ingredients:
8 ounces grated cheddar cheese |
1 large white onion minced |
4 jalapeno peppers minced |
1 pound ground beef browned and drained |
1 cup yellow cornmeal |
1/2 teaspoon baking powder |
1 teaspoon salt |
1/2 cup vegetable oil |
1 cup milk |
2 eggs |
1 can creamed corn |
1 can pinto beans |
Directions:
1. Mix all ingredients together and pour into large greased cake pan and bake at 350 for 45 minutes. |
