Super easy and economical recipe. I adapted it from a box of generic biscuit mix. Their recipe called for making the biscuit and cutting it into 1 inch cubes. I substituted 2 cans of refrigerated biscuits with great (and way less messy) results. Ingredients:
2 (7 1/2 ounce) cans refrigerated biscuits |
1 lb ground beef, cooked and drained |
1 small onion, chopped |
1 medium green pepper, chopped |
16 ounces salsa, your choice of heat |
2 cups shredded cheese, your choice |
Directions:
1. Separate and cut each biscuit in half. 2. Place in greased 9x13 pan. 3. Mix beef, salsa, onions and green pepper. 4. Spread over biscuits. 5. Bake at 350 for 25 minutes. 6. Top with cheese. 7. Return to oven for 10 minutes. 8. Serve with sour cream and chopped scallions. |
