MEXICAN BEEF BITES This recipe came from an estate sale. I obtained it when I purchased the family collection from the Brady Estate in Fate, Texas in 1992. Ingredients:
1-1/2 pounds beef flank steak |
1/2 cup chunky salsa |
12 whole jalapeno peppers halved lengthwise and seeded |
1/4 cup herbed cream cheese |
Directions:
1. Slice steak in 1/4 thick strips 4 inches long. 2. Cut across grain holding a knife at an angle. 3. Marinate beef strips in salsa for one hour. 4. Fill each jalapeno half with 1/2 teaspoon cream cheese. 5. Wrap filled jalapenos with one steak strip covering cream cheese as you wrap. 6. Fasten steak ends with a toothpick then grill 4 minutes turning after 2 minutes. |
