This is my version of refried beans. Ingredients:
1/2 teaspoon cumin |
1/2 teaspoon chili powder |
1/2 lime, juice of |
1 teaspoon oil |
1 jalapeno, chopped fine |
1 onion, chopped medium |
2 garlic cloves, minced |
2 (14 ounce) cans black beans |
12 ounces mexican beer |
1/2 cup mexican blend cheese, shredded |
Directions:
1. Saute onion and garlic until just translucent. 2. Add jalepeno and cook until just begining to brown. 3. Add 1 can beans rinsed and drained. 4. Add 1 can beans NOT rinsed or drained (straight from the can). 5. Bring to a boil, reduce heat to simmer and cook for approximately 35-45min. 6. Add beer as needed to keep beans from cooking dry. 7. DO NOT add any salt until done, when beans are done cooking you can add lime juice, all seasonings and top with cheese. |
