Mexican baked potatoes, the name says it all. I had this many years ago and really enjoyed it. I'm very happy I found the recipe again! Ingredients:
6 large baking potatoes |
1/2 lb lean ground beef |
1 medium onion finely chopped |
1 garlic clove, minced |
1 16-oz can refried beans |
1 8-oz jar salsa |
pepper to taste |
1 cup sour cream |
2 tablespoons finely chopped green onions |
2 tablespoons finely chopped tomato |
corn or tortilla chips for garnish |
Directions:
1. Bake potatoes at 400 degrees for 1 hour or until tender 2. Meanwhile, in a medium saucepan, brown ground beef, onion and garlic. 3. Drain fat, add beans, salsa and pepper 4. Simmer, stirring occasionally, 40 minutes or until thickened 5. To serve, cut an X in the top of each potatoe, fluff potato pulp with a fork and then spoon beef mixture over each potatoe. 6. Garnish with sour cream and sprinkle with green onion and tomato 7. Serve with corn or tortilla chips |
