MEXICAN ASPARAGUS AND CHEESE TORTILLAS This recipe came from an estate sale. I obtained it when I purchased the family collection from the Ouzo Estate in Seagoville, Texas in 1982. Ingredients:
4 yellow corn tortillas |
16 pieces asparagus grilled |
1/4 cup pepper jack cheese shredded |
1/4 cup white cheddar cheese shredded |
1/2 teaspoon salt |
1/2 teaspoon freshly ground black pepper |
olive oil for brushing |
Directions:
1. Prepare grill then for each taco spread 1/4 of the cheeses and 4 pieces asparagus on each tortilla. 2. Season with salt and pepper the fold in half and lightly brush the outside with olive oil. 3. Grill 3 minutes per side until tortilla is crispy and cheese has melted. |
