This tasty casserole will quickly become your favorite weeknight mexican meal. You can easily just stir all the cooked ingredients into one skillet and serve! Ingredients:
4 ounces small elbow macaroni, uncooked |
cooking spray |
1 pound freshly ground turkey breast |
1 (14 1/2-ounce) can no-salt-added diced tomatoes, undrained |
1 (8 3/4-ounce) can no-salt-added whole-kernel corn, undrained |
1 (1.25-ounce) package 40%-less-sodium taco seasoning mix |
Directions:
1. Cook pasta according to package directions, omitting salt and fat. 2. While pasta cooks, coat a large nonstick skillet with cooking spray; place over medium-high heat until hot. Add turkey; cook, stirring constantly, until turkey crumbles. Stir in drained pasta, tomatoes, corn, and taco seasoning; cook 5 minutes, stirring occasionally. |
