A quick and easy egg dish that works for breakfast, lunch or dinner. Ingredients:
4 eggs (lightly beaten) |
4 slices turkey bacon (chopped) |
2 green onions (chopped) |
4 corn tortillas (chopped) |
2 tablespoons butter |
salsa verde |
Directions:
1. Saute the turkey bacon and green onions in melted butter. 2. Add the tortillas and sautee till slightly brown. 3. Add the eggs and lightly scramble till cooked. 4. Serve on plates and top with salsa verde. |
