Not a traditional muffin but easy to make. My grandma taught me how to make these and they are a great zesty breakfast or side for a mexican dinner. As you can see there are a lot of optional ingredients. Basically these require the taco seasoning and cheese but from there the possibilities are endless! If you really want to go crazy try adding a bit of canned pineapple. Ingredients:
2 1/2 cups bisquick |
2/3 cup milk |
1 egg |
1 tablespoon oil |
1 (4 ounce) can diced green chilies (drained) |
1 1/4 ounces taco seasoning (we'll only be using half or as much as you want) |
2 cups cheese, grated (cheese is something you could always use more of though) |
1/3 cup crumbled cooked bacon (optional and you can always use more) |
Directions:
1. First preheat the oven to 400 degrees. 2. Combine all ingredients in med bowl but only half of the cheese. Note that you may season to taste as far as the taco seasoning goes. Also you can use as much or as little cheese as you want. The chiles can be ommited as well but I think they add alot to the muffins. 3. Grease muffin pan lightly with oil or use muffin cups. 4. Use all batter to fill each cup with evenly as possible. 5. Cook approx 10 mins or untill tops are about to brown. 6. Take out the muffins and sprinkle a small amount of cheese on each muffin top. 7. Bake about 2 more mins or untill cheese is melted but not crispy. |
