Mexi-Corn Lasagna by Dei Fratelli |

Simple steps and all the flavors we love. Sounds like an easy casserole to prepare ahead of time or for OAMC. Times and servings are a guess-timate. Ingredients:
1 lb ground beef |
1 (14 1/2 ounce) can corn, drained |
1 (14 1/2 ounce) can chopped tomatoes, dei fratelli mexican tomatoes |
1 cup picante sauce |
1 tablespoon chili powder |
1 1/2 teaspoons ground cumin |
16 ounces low fat cottage cheese |
2 eggs, slightly beaten |
1/4 cup grated parmesan cheese |
1 teaspoon oregano |
1/2 teaspoon garlic salt |
12 tortillas |
1/4 cup shredded cheddar cheese |
Directions:
1. Preheat oven to 375°F. 2. Brown meat, drain. 3. Add corn, picante sauce, Dei Fratelli Chopped Mexican Tomatoes, chili powder and cumin. 4. Simmer, stirring frequently for 5 minutes. 5. Combine cottage cheese, oregano & garlic salt. 6. Arrange 6 tortillas in a lightly greased 13x9x2 pan overlapping as necessary. 7. Top with meat mixture. 8. Spread cheese mixture. 9. Arrange tortillas. 10. Repeat layers until all mixtures are used. 11. Bake for 30 minutes. |
