Here's a quick weeknight entree for all you low carb followers! Ingredients:
1 lb ground beef |
1 small onion, chopped |
1 (4 ounce) can diced green chilies |
2 eggs, beaten |
1/2 cup mayonnaise |
1/4 cup water |
1/4 cup heavy cream |
1/2 teaspoon cumin |
1/8 teaspoon cayenne pepper |
1 cup mexican blend cheese, shredded |
Directions:
1. Cook ground beef in skillet until done; drain. 2. Add onions and chiles and cook for 5 minutes. 3. Meanwhile, mix the rest of the ingredients in a bowl. 4. Put beef mixture into a pie dish. 5. Pour cheese mixture over it. 6. Bake at in a 350 oven for 35-40 minutes or until cheese is puffed and slightly brown. |
